Healthy Bananas Foster

Sweet, cinnamon-dusted bananas that are gooey inside and crisp outside. This healthy version skips the butter and rum, using maple syrup for caramelization instead. Serve with aquafaba whipped cream for a lighter take on the classic.

Pure vanilla extract½ tsp

Bananas4Peeled and halved lengthwise

  1. Preheat: Turn on broiler.

  2. Make glaze: In small bowl, whisk together maple syrup, vanilla, and cinnamon.

  3. Prepare dish: Brush thin layer of glaze on bottom of broiler-safe shallow baking dish.

  4. Arrange: Place banana halves, cut sides up, in dish.

  5. First broil: Brush bananas with half remaining glaze. Broil 4-5 inches from heat 5 minutes until they begin to soften and darken.

  6. Second broil: Brush with remaining glaze and sprinkle with extra cinnamon. Broil 3 minutes more until caramelized.

  7. Serve: Hot, with aquafaba whipped cream. Sprinkle cream with additional cinnamon if desired.

Ripe bananas: Use ripe but still firm bananas for best results

Toppings: Try chopped nuts or vegan chocolate chips for extra indulgence
